Lemon-Butter Shrimp - similar to scampi
Stir together flour, tsp salt, 1/4 tsp pepper. Warm saute pan over medium-high heat and add oil. toss shrimp in flour mixture; shake over excess. Add shrimp to hot pan and cook, turning until opaque - about 3 minutes. Transfer to plate. Tent to keep warm.
Reduce heat to medium-low. Add 2 tblsp of butter and the garlic. Saute until soft, not brown - about 2 minutes. Add the wine, zest and lemon juice and bring to a boil over high heat. Cook until reduced by half. Reduce heat to very low. Add butter 1 tblsp at a time and whisking until remaining butter is used. Return shrimp to sauce and gently mix.
or plate shrimp and spoon sauce over shrimp. can be served over spaghetti.
or serve as appetizer with sauce on side. other sauce options can be used too.
serve w fresh bread to soak up lemon butter sauce.
