saute chicken breasts in buter until light brown. I often do not do this...just put breasts in melted butter. Salt and pepper chicken to taste. Place in baking dish. Add sherry, lemon juice and rind to butter. Cook over low heat and stir for 3-4 min. Slowly blend cream into sauce, stirring constantly. Remove from heat and pour over chicken. Sprinkle cheese over chicken. Bake uncovered at 350 for 20-30 min.
