Adjust sweetness to taste
Melt coconut oil gently over low heat until just melted then whie blender is running, add coconut oil and mix until evenly distributed
Now take spoonfuls out and shape into balls. The dough will feel a little oily but the finished chilled bites will not.
put 1/3 cup coconut flakes on a plate and roll each ball in the coconut
Place finished bites onto a baking sheet covered with parchment paper and freeze for 30 minutes to firm up
Store in the freezer
