Suggest a better descriptionIn large mixing bow, mix together flour, baking soda and salt. Set aside
Using a mixer with paddle, beat butter and sugar until light and fluffy. Add egg and mix until well combined. Add lemon zest , lemon juice and lemon extract (2 drops food coloring if using). Scrape down walls of bowl.
Slowly add dry ingredients and mix until just combined.
Cover tightly and refrigerate for 30 min.
Preheat oven to 350. Line two cookie sheets with parchment
Remove cookie dough from refrigerator and scoop out two tablespoon portions. Roll dough into balls and press down gently
Bake at 350 for 10-12 min. Cookies should look done on outside but soft on inside. Remove from oven and let cool on baking sheet t for 5 min then transfer to wire rack to completely cool
