Yummy diabetic friendly pie in a graham cracker crust
Use low-fat (1%) milk; be sure egg substitute is cholesterol-free;
7 packets of sugar substitute is equivalent of 3 1/2 tsp sugar
- this recipe was tested with sucralose-based sugar substitute
graham cracker crust is 6 oz size
Combine milk, egg substitute, cornstarch and salt in medium saucepan; whisk until cornstarch is dissolved.
Cook over medium heat, stirring constantly, about 5 mnutes or until mixture boils and thickens.
Stir in sugar substitute, lemon peel, lemon jice and vanilla.
Transfer mixture to medium bowl. Press plastic wrap onto surface; cool to room temp.
Spoon filling into crust. Top with peaches and blueberries. Refrigerate 2 hours or until chilled.
Prep Time: 15 minutes plus chilling time. Cook time: 5 minutes.
