Delicious set custard with caramelised sugar topping, perfect for romantic meals or formal dinner parties.
1) Preheat the oven to 150c
2) To prepare the Crème Brûlée, wash the lemons well and finely grate the zest into a saucepan with the double cream. Slowly bring to the boil. Meanwhile combine the egg yolks and the caster sugar and beat with a whisk to a pale colour. Pour the boiled cream onto the egg yolk mixture and combine all the ingredients before carefully pouring into the individual ramekin dishes.
3) Line a deep baking tray with double kitchen paper and place the ramekins on top. Pour in enough hot water to reach three quarters up the side of the dishes. Place this Bain marie into the oven and cook for approximately 30 minutes or until the Crème Brûlées have just set.
4) Remove each dishes from the Bain Marie and cool to room temperature before chilling in a refrigerator for at least 2 hours.
