โขin a small pot (not on stove), whisk together egg replacer and sweetener
โขadd milk and lemon juice, as well as food colour and extract/zest if including
โขwhisk together until completely combined (see first photo)
โขplace on medium heat and whisk continuously for ~5mins until mixture thickens
โขif itโs too thick, add lemon juice to thin it out (or water for more diluted flavour)
โขremove from stove once thick and allow to cool for 5-10mins

โขin a small sauce pan, whisk together lemon juice and sweetener on medium heat
โขcrack egg in a separate bowl and mix together
โขonce sweetener has dissolved, turn to low / simmer
โขadd egg and whisk continuously for 3-4mins, until mixture has thickened
โขremove from heat and allow to cool for 5-10mins
