This is a delicious lemon custard pie that has a great lemon flavor and it's not too sweet. Perfect chilled and served on a warm summer evening.
Follow the instructions on the store bought deep dish pie crust to pre cook the pie crust, and allow to cool completely. I find it easier to buy the deep dish pie crusts in the tin.
Mix the butter and sugar in a stand mixer fitted with a whisk attachent on medium-high speed until combined, about 2 to 3 minutes. Add the egg yolks and beat until pale and thick, about 2-3 minutes. Reduce mixer speed to medium low; add the flour, lemon juice, lemon zest, nutmeg, and the salt. Beat until just incorporated. Increase the speed to medium high and slowly pour in the buttermilk. Scrape down the sides of the bowl and continiue beating until combined. Transfer mixture to a large mixing bowl.
Clean the mixing bowl and whisk attachment. Add the egg whites and beat on medium-high speed until stiff peaks form, about 5 minutes. Fold the egg whites into the yolk mixture in three additions until no white streaks remain. Pour the filling into the prepared crust. Transfer to a baking sheet and bake until golden and set around the edges (and the center of the pie will still be jiggely), about 45-50 minutes, rotating the pie halfway through cooking. Let the pie cool on a rack. Dust with powdered sugar before serving.
The eggs and buttermilk MUST come to room temperature before starting this pie. That will take a minof 2 hours but must not exceed three hours minimum
