Suggest a better descriptionMake the pastry:
- Sift the flour and icing sugar into a large bowl, add the butter and rub in with the finger tips until the mixture resembles fine bread crumbs
- Mix in the egg yolk to make a soft playable dough
- Wrap the dough in cling film and chill for 30 minutes
- Roll out the dough on a lightly floured surface and use to line the flour tin. Bake blind in a preheated oven at 180C for 10 minutes. (Note: Recipe for sweet pastry here yields about 8 time the needed pastry for 1 pie.)
- Remove baking beans and foil and bake the pastry shell for 5 minutes until the base has dried out. Remove from oven and reduce temp 130C for 150C
- Mix lemon zest and juice with cornflour. Bring the water to a boil then stir into the lemon mixture
- Return to the pan and bring back to the boil stirring until the mixture thicking. Remove medium heat
- Leave to cool slightly, then stir in the egg yolks and sugar. Return to a low heat and cook, stirring, until just. Summering pour into the pastry shell
- Whisk egg whites until stiff whisk in sugar. 1 tsp at a time put on top of filling and spread over evenly bake for 45 minutes or until ready
