Makes 3 cups
Cook orzo according to package directions, omitting salt. Drain well. Return orzo to cooking pot and stir in spinach, allowing it to wilt. Add the oil and stir. Add the shallots, garlic, lemon juice, lemon zest, oregano, salt, pepper, and Feta cheese. Gently stir to combine and serve warm or cold.
