Smooth creamy dessert
Bloom gelatin in ice cold water until soft
Simmer cream, sugar and zest for 10 minutes
Strain cream mixture
Remove gelatin and squeeze to remove excess moisture
Add gelatin to cream mixture and stir until melted
Pour into serving dishes and chill for 2 hours (4 hours if removing from a mold)
