Lemon Pepper Chicken & Rice Casserole is perfect comfort food. Quick and easy for a work-night dinner. Leftovers freeze well, and taste even better the next day.
Preheat oven to 350 degrees. Put rice on to cook. You can use quick cooking rice to save time. Cut chicken breasts into bite-sized cubes. Spray frying pan with cooking spray. Cook chicken, sprinkling with lemon pepper, until browned and cooked through. In a casserole dish, combine cooked chicken, cooked rice, cream of chicken soup, milk or water, half of the cheese, and more lemon pepper (to taste). Mix together thoroughly. Top with remaining cheese. Add extra cheese, if you like. Bake uncovered for 20 minutes or until cheese is melts and bubbles. Allow casserole to cool for about 10 minutes before serving.
You can adjust the lemon pepper and cheese to suit your taste.
