Lemon-Poppy Seed Bread
Preheat the oven to 350-degrees F.
Combine the first 10 ingredients in a large bowl and mix well. Then, slowly add the flour, making sure to scrape the sides of the bowl.
Pour the mixture into a loaf pans. (you can bake as muffins too). Bake for 30 minutes, or until a toothpick in the middle of the loaf comes out clean. (mini loaves may take less time, check after 20 minutes)
While bread is baking, prepare the glaze. Combine all glaze ingredients in a small bowl and whisk together until the sugar is dissolved. Set aside.
When finished baking, remove the bread from the pan and let it cool. Once it’s completely cooled, brush it with the lemon glaze.
