Italian sweet, mild, or hot sausage with lemony linguine
Prepare linguine according to pkg directions. Reserve 1/3 cup water from cooked linguine.
Cut up sausage and brown in oil (I prefer grape seed oil)
Remove sausage and place on paper towels to drain. Drain excess oil from pan and lightly wipe out.
Sauté shallot and garlic until tender
Add spinach stirring occasionally until wilted.
Add sausage to spinach, shallot, garlic mixture and stir
Add zest and stir
Add reserved liquid from linguine and juice from lemon and stir.
Add linguine and stir.
Allow most moisture to evaporate and lemon juice to absorb into pasta.
