Suggest a better description1) Combine the flour, baking powder, and salt. 2) In a large bowl, cream the vegetable shortening and sugar. Beat in the eggs. Beat in the lemon extract and zest. Gradually blend in the dry ingredients. 3) Divide the dough in half. Form each half into a log 2 inches in diameter. Wrap in waxed paper and chill for 4 hours. 4) Preheat the oven to 400 degrees. Lightly grease 2 baking sheets. 5) On a floured surface, roll out the dough to a thickness of 1/4 inch. Using a 3-inch round cookie cutter, cut into rounds and place 1 inch apart on the prepared baking sheets. Sprinkle with granulated sugar. 6) Bake for 6-8 minutes, until lightly colored.
