1.> Roll out shortcrust pastry and place in pan 8-9" pie plate
2.> Place ceramic baking beans in bottom on pie plate
3.> Cook for 15-20 minutes and allow to cool.
Filling:
1.> On top of double saucepan mix egg yolks, sugar, flour, lemon rind and gradually stir in lemon juice and water.
2.> Cook, stirring, over boiling water until mixture is smooth and thick
3.> Cool, pour into pie shell
Meringue:
1.> Beat egg whites and cream of tartar until thick and gradually add sugar, 2 tablespoons at a time
2.> Beat until sugar dissolves.
3.> Spread over filling in pie shell, sealing completely with meringue.
4.> Bake in moderate oven (350F) or until meringue is golden.
Can substitute lemon for lime, if desired.
