1 Place lentil in a pan with celery and thyme and 2 cloves of garlic. Add 750ml water and simmer for 30min. Remove spices and drain. Crush remaining garlic, add ground coriander, salt, pepper, vinegar and oil. Leve to cool.
2 When cold, add remaining ingredients and season.
