Vegan and amazing; kids love it

Sauté onion and garlic in a few Tbs of oil (use deep large pan)
Add carrots and celery and pan fry for 4-5 min
Add tomato paste and wine and let wine cook off
add everything else except pasta and let it simmer 20-30 min
Boil pasta al dente
Stir pasta into sauce with some pasta water, add spinach and serve.
