Put the olive oil in a pan and turn on stove to medium high.
Throw in the mirepoix (carrots, celery, onions) along with the garlic and bacon/ham. Saute for a bit, until tender.
Throw in the rest except vinegar, salt & black pepper. Bring to a boil, then reduce heat to low and cover. Simmer for 45 minutes.
Add the salt, vinegar & pepper.
