My favorite pie.
Mix sugar, salt, cinnamon, ginger and cloves in a small bowl. Beat eggs in a large bowl. Stir in pumpkin and sugar-spice mixture. Gradually stir in evaporated milk. Pour into pie shell. Bake in preheated oven 425 degrees oven for 15 minutes. Reduce temperature to 350 degrees; bake for 40 - 50 minutes or until knife inserted near center comes out clean. Cool on wire rack for 2 hours. Serve immediately or refrigerate.
This pie also freezes very well. I usually make mine a couple of weeks ahead and freeze it.
In place of the cinnamon, ginger, cloves listed above, I sometimes use 1 3/4 tsp. McCormick's Pumpkin Pie Spice plus 1/2 tsp. cinnamon.
