split and scrape seeds from Vanilla bean
Use fingers to run seeds from Vanilla bean and lime zest into the sugar breaking up an clumps
Add egg whites and wisk until frothy
Wisk in salt.
Add coconut and toss until completely covered.
Drop mounds of coconut mixture onto parchment paper lined baking sheets
Bake, rotating halfway, 12-20 minutes until golden brown.
Cool on baking sheets before removing from paper.
