Preheat oven to 350'
Line a 9 by 13 baking pan with parchment paper that hangs over the sides so you can lift the whole cookie out after baking.
Stir with heavy spoon or use a hand mixer. Combine all crust ingredients just until a smooth dough forms.
Pat dough evenly with fingertips in the bottom of your baking dish to form a crust. You can come up the sides slightly but not necessary.
Bake 20 minutes until lightly brown. Remove from oven. Set aside.
Mix together all ingredients and pour over crust
Bake until filling is set approx 25-30 mins
Remove from oven and let cool completely
For glaze: optional
Stir all ingredients together adding lime juice one tablespoon at a time until a thick slightly pourable glaze is reached. It should not take much juice.
Pour and/or spread over cooled cookie
Let glaze set up approx 30 mins then lift entire cookie out of the pan and place on a cutting board.
Cut into bars of your preferred size
This amount of filling wiill give a good ratio of filling to crust. If you want to make this recipe in an 8 by 8 baking dish then you will need to cut the ingredients of the filling in half and cut the flour in the crust to 1 cup.
