Suggest a better descriptionPeel cucumber, slice in half, remove seeds. Dice into small cubes (1/8 inches). Sprinkle 1 teaspoon of salt over cucumber and mix well. Let sit for half an hour. Drain off liquid.
Add cucumber to yogurt, mint, garlic, lemon juice, lemon zest, olive oil, salt & pepper.
Store in fridge for minimum half hour before serving.
