Delicious tortilla soup with nice lime flavor.
If using a rotisserie chicken, remove the meat from the bones and shred into bite size pieces. Set chicken aside to be added to soup later.
If using boneless chicken breasts cut them in half lengthways so that they will cook more quickly and evenly. Season meat with salt and pepper and southwest seasonings if you prefer.
Set a large heavy bottom wide mouth pan/dutch oven on medium high heat and warm the oil. When then pan is hot lay the chicken pieces in to cook till they are nicely browned on each side, approx 4-5 minutes each side. Avoid crowding the pieces of chicken in the pan so that they will cook evenly and brown nicely. Set chicken aside when finished cooking.
While chicken is cooking, begin chopping the onion, pepper and tomatoes. Add onion and pepper to pan when chicken is finished cooking, add a little more oil if pan seems dry. Cook these till softened about 4 minutes, stir occasionally, then add tomatoes and cook for 2 minutes, stir occasionally. Add broth, lime zest, lime juice, salt, pepper and chopped cilantro. Chop chicken into bite size pieces and add to soup. Bring soup to a boil, reduce heat and simmer till ready to serve.
