Suggest a better descriptionMake the crust: scrape the seeds from the vanilla bean into a bowl and stir in the flour, sugar and zest. Add the egg yolk butter and salt. Knead the mixture just until it forms a dough. Flatten into a round and chill, well wrapped, for 1 hour. Remove the side of a 9 inch springform pan, oil the bottom lightly and press some of the dough onto it 1/8 inch thick. Bake the bottom crust in the middle of a preheated 400 degree oven for 10 to 12 minutes until golden and chill. Butter the side of the pan, attach to the bottom and press the remaining dough 1/I inch thick onto the side, sealing to the bottom crust.
Make the filling: In mixer bowl beat the cream cheese, sugar, flour, zest’s and vanilla until smooth. Beat in the whole eggs and yolks, one at a time, beating lightly after each addition, and stir in the cream. Pour the filling into the crust lined pan and bake in the center of a preheated 550 degree oven for 12 minutes. Reduce heat to 200 degrees and bake for 1 hour more. Let cool in the pan on a rack. Chill overnight then remove the side of the pan.
