Preheat oven: 350(F) degrees
Whisk the eggs in a large mixing bowl. Add all the remaining ingredients except the olive oil, and stir to combine.
Heat the olive oil in a 9-inch cast-iron skillet. When the oil is very hot, pour in the egg mixture.
Place the skillet in the oven and bake for 20-25 minutes, or until the frittata is set. Cool for 10 minutes before removing from skillet.
Run a rubber spatula around and underneath the frittata to loosen it. Slide frittata onto plate. You may serve it right away, or let it cool to room temperature.
You can vary this many different ways. Try substituting different spices and cheeses along with vegetables in place of the macaroni.
