Suggest a better descriptionCook rice according to pkg. directions, then cool. Mix artichoke juice with mayo and curry powder. Add bell pepper, onions, olives and artichokes to rice mixture Chill and serve. Yield 8 servings
I usually double or triple when I make it. Also sometimes I add chicken chunks for a main dish luncheon. You can make it days ahead. Very easy!
