1. Prepare the lo main noodles according to package directions.
2. Prepare the stir fry veggies
3. Prepare the sauce. Stir together the chicken stock, oyster sauce, corn starch and sesame oil. Set aside.
4. For the noodles: Heat a pan to high and add the oil. Once you see wisps of white smoke, add the ginger and garlic and cook until light brown and fragrant, about 20 seconds.
5. Stir in the chicken and cook until medium, about 1 minute.
6.Add the noodles and veggies to the pan and cook until the veggies are tender, about 1 minute.
7. Stir the sauce, pour into the pan and incorporate all the ingredients well.
8. Continue to cook until the chicken is cooked through and the sauce started to bubble and thicken.
9. Transfer to a serving platter and serve.
