Take half of potatoes and coarsley mash. Sprinkle pot with small amount of olive oil and sweat onions. Lightly spoon in flour, whisking, and gradually add milk until blended. Cook over medium heat until thick and bubbly. Add mashed potatoes, cheese,salt and pepper; stirring until cheese melts. Add remaining potatoes. Remove from heat and stir in sour cream. Cook over low heat until thoroughly heated - do not boil. Ladle into bowls and sprinkle with bacon.
