1. Preheat oven to 200 C. Heat oil in a non-stick frying pan over medium heat. Cook onion for 2 minutes, or until soft. Add mince. Cook, stirring with a wooden spoon, for 5 minutes or until browned.
2. Add chilli powder, taco seasoning, tomato paste and water. Reduce heat to medium-low. Simmer for 5 minutes, or until thick.
3. Arrange corn chips on a heatproof plate. Top with mince. Sprinkle with cheese. Bake for 15 minutes or until hot.
4. Load up with salsa, guacamole, tomato and sour cream. Serve.
Guacamole;
Place the avocado in a bowl. Use a fork to roughly mash. Add lemon juice and sweet chilli sauce and stir until well combined.
