Cook onion in oil in a large pot on stove. Add celery and garlic and cook 2 to 3 minutes. Add cauliflower, zucchini, chicken broth, bay leaf, salt and pepper. Bring to a boil and cover. Simmer until vegetables soften, about 8 - 10 minutes. Remove from heat and discard bay leaf. Mash with a potato masher. Slowly add Greek yogurt and 1 cup of the cheese. Add chicken. Garnish with remaining cheese, bacon, and green onions.
