Ultimate mashed potatoes
Sauté bacon with butter and garlic until crisp and set aside
Peel and chop potatoes inti 1/12 inch pieces and place into pot covered in chicken stock
Bring to boil then reduce to simmer and cook until fork tender 10 to15 minutes
Drain chicken stock from potatoes
Mash potatoes until no large chunks remain
Add mascarpone cheese,sour cream and Parmesan mix well. Add heavy cream as needed to reach desired texture
Transfer potatoes to a platter
Top with bacon and drizzle pan drippings from bacon and garlic
Top with green onions for garnish.
