- Make a bed of lettuce on a platter and arrange the eggs, bacon, watercress, avocados, tomatoes and lobster meat over the lettuce and season with salt and pepper.
Dressing
- Whisk together vinegar, Worcestershire, mustard, maple syrup, garlic and salt and pepper to taste. Mash in the egg yolks to make a paste.
- While whisking, slowly drizzle in olive oil and stir in chives.
- Pour over salad and sprinkle with bleu cheese.
