Great with or without Lobster
Preheat oven to 375deg
Make pasta according box directions, strain with a cool water to stop cooking.
Heat milk in a small sauce pan until hot, but NOT boiling.
In a large pot or Dutch Oven, melt 6 tablespoons of the butter and add flour to make a roux. Cook on low heat for 2 minutes, stirring constantly with a whisk, while still whisking gradually add the hot milk and cook a minute or two more until thickened and smooth.
Turn off heat.
Add Cheeses, salt, pepper and nutmeg. Stir together until cheeses are melted. Add pasta and mix to combine, add lobster meat and stir well. Divide into 6-8 gratin dishes or a casserole pan.
Melt remaining 2 tablespoons of butter and mix in fresh bread crumbs. Sprinkle evenly on top of mac and cheese.
Bake for 30 to 35 minutes or until the sauce is bubbly and the crumbs are nicely browned.
