Suggest a better description1. Boil lobster tails on salted water for 8 minutes.
2. Place tails on cool water (ice water is better) to stop the cooking process and let them sit for 10-15 minutes.
3. Chop tails and cornichons.
4. Mix lobster tails, mayo, cornichons, ketchup and black pepper and set aside (this can be done a few hours before or even a day).
5. Butter the brioche toast them on a pan.
6. Set the toasted bread on a plate and fill them up with lobster mix.
7. Serve some potato chips on the side and garnish with chopped cilantro or parsley.
