Steam lobsters for 20 min and allow to cool. Pick lobster meat from lobsters. Simmer half and half with lobster shells and 1/2 of butter for at least 30 min. In a pot, melt rest of butter and add flour, cook until light brown, then add paste and nutmeg. Strain shells from half and half and pour into flour mixture. Bring to a slow boil then add lobster meat and sherry. Cook for another 15 min.
