Make a mirepoix of the first 3 vegetables and 1 TBS butter, cooking till softened about 8 minutes. Reserve remaining butter to fry em up at the end.
Reserving 3/4 of the saltines, mix everything together well. Form mixture into 3 inch (diameter) patties.
Dredge cakes in reserved saltines and fry em up till golden brown, about 8 minutes.
