Slightly spicy, slightly sweet, slightly tangy--and breaded! The best part? It's low-carb! You can bread the traditional way, but this recipe goes well with yeast meal..great nutritious value without sacrificing the flavor.
In shallow pan, rub 3-4 tablespoons olive oil and crushed/shredded garlic clove into the pork chops. In separate small microwavable bowl, combine the honey, lemon, chicken bouillon cube piece, and 1/3 cup water. (Can substitute chicken cube and water with chicken broth.) Microwave until chicken cube has more or less dissolved (about 30 seconds). Stir and pour this mixture over pork chops. Top with sliced onions and add salt and pepper to taste. Cover and let marinate for about 30 min.
In the meantime, you can beat the egg in separate bowl, and in separate plate, sprinkle the yeast meal (can possibly be substituted with flax seed meal?) Turn on the stove to med-high heat.
After marinating, remove the pork chops, set aside the sliced onions and save the honey-lemon sauce. Dip each side of the pork chops first into the egg and then the yeast meal. Add about 3-4 tablespoons of olive oil to a frying pan and lightly brown both sides of each pork chop. (About 2 minutes each side.) Place chops into another, oven-safe dish. Add the honey-lemon sauce from earlier to frying pan and let bubble until a medium brown, no more than 10 seconds. Pour this over the awaiting pork chops and reunite onion slices on top. Sprinkle with cayenne pepper flakes and a bit more salt and pepper, if desired. Cover with foil and pop into oven for 30 minutes at 375 degrees. (For thick pork chops, consider leaving them for a bit more time.)
Goes great with steamed broccoli, enjoy!
