In recent years, many of us have been turning to gluten-free diets for various reasons. Maybe you have an intolerance or you’re just trying to cut out excess carbs. Whatever the reason, living a gluten-free lifestyle doesn’t mean you have to miss out on all the foods you love… like this gluten-free manicotti. Packed with ricotta, mozzarella, and Parmesan cheeses, this low-carb, gluten-free (also vegetarian!) pasta bake will be your new best friend.
For the pasta:
1. In a small mixing bowl, beat eggs until light. Add milk, flour, and salt. Whisk until smooth.
2. In a nonstick omelet/crepe pan on medium-low heat, pour ? cup batter into the pan and turn to evenly coat the bottom of the pan, making a 6-8 inch pancake. When batter sets, flip, and heat very briefly on the other side. Cool on parchment. And repeat. If your pan sticks, a slick of spray oil may be needed. Makes approximately 6-10 shells.
For the filling:
1. Sweat the shallot and garlic in a small sauté pan until translucent. Remove from heat and cool slightly. Mix the shallot, onion, cheeses, eggs, and salt, and pepper in a mixing bowl. Evenly divide filling among the cooled shells. Roll and place in a greased baking dish. Top with your favorite tomato or vodka sauce and sprinkle with additional cheese.
2. Bake at 375° for 30 minutes or until bubbly and golden.
Adapt the filling to suit your tastes -- any combination of fresh herbs with sautéed spinach, and/or mushrooms would be an excellent addition.
