Try this LOW CARB TORTILLA: (cheese) recipe, or contribute your own.
Suggest a better descriptionhandful of cheddar cheese (1/2-1 cup grated depending on what size tortilla)
Drop a handful of grated cheese (any cheese would probably do) on a cookie sheet and spread it out to make the size tortilla you want. I usually use enough cheese to make a small tortilla. Keep in mind it will spread a little when baking. bake for 6-8 mins @ 350°.
The ends should be browned but you don't want it browned all the way to the middle or it will just crack and not bend. If this happens and you over bake it, don't panic and bag it for a salad topping or tortilla chips. Then try again! The picture above was 6 minutes. The very top picture was 8. It takes a little practice.
Remove from the oven and let it sit on the cookie sheet for a few minutes. After it's cooled enough to remove w/out splitting apart, transfer it to a paper towel to absorb some of the grease. Then fill with your low carb taco fillings.
LOW CARB DORITOS/TORTILLA CHIP:
Using the same approach as above but break or cut your tortilla into wedges. Sprinkle with chili powder for a little spice. You can also just cut your cheese into squares if you don't feel like grating it.
