Tender and delicious from the buttermilk

Preheat oven to 325 degrees
Lightly grease a loaf pan and dust with flour (or use Bakers Joy spray)
Using mixer, beat eggs and sugar until thick and light - about 5 minutes. Mix bananas, buttermilk, oil and vanilla. Sift flour, baking powder, baking soda and salt over mixture - beat until blended. Transfer to pan.
Bake until golden brown and tests clean - about one hour. Turn out on rack to cool.
