Preheat oven 375.
Spray muffin pan, or cupcake liners.
Combine oats with milk. Mix together.
Add applesauce and eggs, and mix until combined.
In separate bowl, whisk dry ingredients together.
Mix wet ingredients with the dry mix, until combined.
Add chocolate chips. Do not over mix, or muffins will be tough.
Spoon mixture in muffin cups.
Bake for 16-18 minutes, or until done.
