Chicken is not only a great source of protein, but it's naturally low in fat. Today I'll show you how to make a delicious and low fat roasted rosemary chicken.
In a small bowl you're going to make your seasoning. Add your chicken broth and olive oil. Using your garlic press crush your fresh garlic into your mixture. Add your spices: italian seasoning, garlic powder, pepper, salt and rosemary. The rosemary is whats really going to make your favors pop. Your going to beat your mixture together with a whisk.
Get your chicken in the roasting tray, making sure it's washed and all the gizzards have been removed. Take your brush and then brush the seasoning onto chicken, making sure you get the spices evenly spread all over the chicken.
Chop up your onion into thin strips and stuff the chicken with it. Take either string or pins to hold the legs of the chicken together and around the breast. Pin each wing down to the side or using string, tie around the body of the chicken. Then take your spit and push it through the center of the chicken and attach the arms.
Put the dripping pan with the chicken in your rotisserie and carefully attach the spit into the turner. Set your roaster to 350 and you're going to cook eh chicken for about 15-20 minutes per pound or until the juices run clear. Make sure to baste your chicken every 20 minutes or so. Once it's got. Nice even tone, you can remove the spit from the turner, remove the spit and remove the pins or string.
