A great appetizer--it's really good to eat with sweet chili sauce...
Mix ground beef, carrots, onions, soy sauce, accent, and preferred amount of lime juice together in large bowl. Take thawed out spring roll wrappers and lay flat. Put about a tablespoon of the beef mixture on one corner of the wrapper and fold it over twice, then fold in both sides and continue rolling the wrap. Take your egg yolks and add some of it to the opposite corner to seal the wrap. Then heat your cooking oil in pot and add in your wraps. Cook until they are a golden brown color and the meat is cooked inside. Enjoy!
