Cook pasta according to directions on bag. Melt butter, cook onions until soft, add flour and cook for 2-3 min's. Add milk and cook until thickened. Add cheese and let melt together (I used medium cheddar, but you can use sharp cheddar or sharp/gruyere mix, or add extra leftover cheese like American, I sometimes throw in a bit of cream cheese as well). Season with S&P and I also grate in some fresh nutmeg. Once pasta is cooked, combine with cheese mixture. You can add diced ham if desired. Bake at 350 for 45 mins-1hr until hot and bubbly.
