Preheat oven to 350
Cook macaroni to slightly firm. Drain and set aside
In small bowl, beat egg.
Medium low heat - in large pot, melt butter and sprinkle flour
Whisk constantly, cook couple minutes - don’t let burn
Pour in milk, add mustard, whisk until smooth.
Cook until thick, about 5 minutes
Reduce to low heat
Take 1/4 cup of the sauce and slowly pour into egg, whisking constantly to avoid cooking egg.
Once smooth, pour egg into the sauce, whisking constantly.
Add cheese, string until melted
Add salt and pepper - taste. Don't understand salt.
Pour in drained, cooked macaroni and stir.
Serve or add to baking dish, top with cheese and back until bubble, 20-25 min.
