Jen's recipe
1. Cook pasta until slightly under done - strain and toss in 2 Tablespoons butter.
2. Melt 5 Tablespoons butter; sauté garlic and add flour. Cook until golden.
3. Whisk in half-and-half and heavy cream. Let simmer until thickened.
4. Whisk cheese in 1 cup at a time on low heat.
5. Remove from heat and stir in cream cheese an spices.
6. Combine cheese sauce with pasta; fold until combined.
7. Top with 1 cup colby, 1 cup medium cheddar, and 1 cup mozzarella
8. Bake at 425 degrees for 15 minutes, then broil for 5 minutes.
