Sour cream and ricotta lend creaminess to this butter-free recipe. Cheddar can be substituted with just about any other cheese (pepper jack kicks it up a notch).
Pre-heat oven to 375 degrees F. Cook pasta according to package directions. Drain. In large bowl mix together ALL ingredients (adding salt/pepper to taste). Grease a casserole dish and pour in mixture. Bake 1 hour.
Season water for pasta to intensify the flavor. Sprinkle an extra handful of shredded cheese over assembled casserole before baking. Mexican variety or pepper jack for example.
