Preheat oven to 425°F
Cook and drain pasta noodles per package instructions.
Prepare muffin pans by coating with butter and dusting with parmesan cheese
Melt butter and whisk in flour over medium heat - about 2 minutes
Whisk in milk, nutmeg and mustard and cook stirring continually until boiling - about 5 minutes
Add in both cheeses, whisk until melted
Take off the heat and whisk in the egg yolk.
Fold in the macaroni
Spoon into muffin pans, pack gently
Sprinkle with parmesan cheese
Bake on top and middle third shelf for 10-15 minutes
