A Mac & Cheese above and beyond!!
Melt butter in saucepan. Add flour and cook together for a few minutes over med heat. Add the milk/cream/ and or Half N Half. Stirring frequently, cook over medium heat until starts to bubble. Does not need to boil but you need the thickened effect with the heat. At this point, the mixture will be quite thin but will thicken more with the cheeses. Stir in cream cheese and continue cooking til almost mixed in (does not need to be completely dissolved). Add the various cheeses. I use any cheese I have in the house. Once again, cheese does not need to be completely melted in.
Add the cooked macaroni. You may need to add more milk/cream/Half N Half. since it thickens considerably while baking, I like to start out with it fairly thin at this point.
Pour into a baking dish. Sprinkle parmesan cheese over.
Back about 30-40 min. Top will brown a little.
I usually make up a large amount and freeze dinner size portions.
